Thanks cataspanglish! Unlike Jonathon, I was searching for a post like this because I DO have fresh anchovies - and have never had to prepare them before. Well done - excellent post!

Hey Jonathan

we wanted to do this post just to show how easy it is. When I first arrived in Spain, like a good Brit, the only fish I ate was fish'n'chips. It's the simple brilliance of Mediterranean cooking - fresh ingredients and no fuss.

I didn't realise it was hard to get fresh anchovies over there..btw I saw a great video about the fish market in Washington DC - I'll try to post it.

I LOVE this post. I really wish the American culture ate more whole fish and i wish it was easier for us to get our hands on freaking fresh anchovies! I'm saving this post just in case I am lucky enough to follow your instructions one day. There are nothing like fried sardines and fried anchovies eaten in spain. mmmmmmm.
