Fried anchovies - not for the squeamish

I often get the impression that people don’t eat fish more because they are not sure how to prepare them, so here we are going to show a step by step method for preparing anchovies to be shallow fried.
First wash your fish and pat them dry

Now cut off the heads and pull out the innards
Spinkle with a light layer of salt to absorb moisture, dip them in flour & shallow fry in olive oil
Serve with a slice of lemon, some lettuce, bread and a glass of white wine. Simple and great food.

I LOVE this post. I really wish the American culture ate more whole fish and i wish it was easier for us to get our hands on freaking fresh anchovies! I’m saving this post just in case I am lucky enough to follow your instructions one day. There are nothing like fried sardines and fried anchovies eaten in spain. mmmmmmm.

we wanted to do this post just to show how easy it is. When I first arrived in Spain, like a good Brit, the only fish I ate was fish’n'chips. It’s the simple brilliance of Mediterranean cooking - fresh ingredients and no fuss.
I didn’t realise it was hard to get fresh anchovies over there..btw I saw a great video about the fish market in Washington DC - I’ll try to post it.
